How long do dried beans last?
Dried beans keep their best quality for 2–3 years in the bag and stay edible for decades when sealed with oxygen absorbers, although very old beans need longer soaking and cooking.
| Dried Beans | |
|---|---|
| Unopened | 2–3 years for best quality |
| Opened | 1–2 years in an airtight container; cooked beans 3–5 days in the fridge |
| Ideal storage | Airtight, cool, dry and dark. |
| Long-term | Up to about 30 years in Mylar or #10 cans with oxygen absorbers; quality, not safety, declines. |
Storage tips
- Old beans that stay hard after long cooking can still be pressure-cooked or ground into flour.
- Store canned beans alongside dried ones: they need no fuel or water to prepare.
Signs it has gone bad
- Insects, larvae or fine webbing (pantry moths) in the package
- A musty, sour or moldy smell, or visible mold
- Clumps or damp patches from moisture getting in
- A sharp, paint-like or bitter smell, which means the natural oils have gone rancid (brown rice, oats, whole-wheat flour)
